A bite of perfection! 🍋🍵 Turning matcha and lemon into the fluffiest muffins ever is easier than you think! These Matcha Lemon Muffins are a delicious mix of zesty citrus and earthy matcha flavors. Topped with a creamy matcha frosting, they’re perfect for any occasion!

Ingredients

For the batter:

  • 1 lemon (zest and juice)
  • 170g sugar
  • 100g butter (softened)
  • 250g yogurt
  • 2 eggs
  • 280g flour
  • 1/2 packet baking powder (8g)
  • 1 pinch of salt

For the frosting:

  1. Preheat and prepare:
    Preheat your oven to 180°C (350°F). Line a muffin tin with liners to get ready for baking.

  2. Mix the wet ingredients:
    In a large bowl, cream together the softened butter and sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition. Stir in the yogurt, lemon zest, and juice until combined.

  3. Incorporate the dry ingredients:
    Gradually fold in the flour, baking powder, and a pinch of salt. Mix until just combined—don’t overmix to keep the muffins light and fluffy!

  4. Bake the muffins:
    Divide the batter evenly among the muffin cups. Bake in the preheated oven for 22-25 minutes, or until a toothpick inserted into the center comes out clean. Let the muffins cool completely.

  5. Prepare the frosting:
    While the muffins cool, beat the cream cheese, powdered sugar, and Matcha Union Premium Matcha powder in a bowl until smooth and creamy.

  6. Decorate and serve:
    Once the muffins are completely cooled, generously spread or pipe the matcha cream frosting on top. Enjoy the perfect harmony of flavors!
