INGREDIENTS

  • 1/2 cup unsweetened coconut flakes

  • 1 cup rolled oats
  • 1/4 cup coconut flour or almond flour

  • 1 scoop vanilla protein powder 

  • 1 tbsp MU premium matcha 

  • 1 tbsp coconut oil, melted or cashew butter

  • 1/4 cup maple syrup or honey

 

INSTRUCTIONS

1. In a food processor, pulse the rolled oats, unsweetened coconut flakes, coconut flour or almond flour, vanilla protein powder, and matcha powder until the mixture is finely ground.

2. In a mixing bowl, combine the coconut oil or cashew butter, maple syrup, and the dry mixture from step 1. Stir until well combined.

3. Using your hands, roll the mixture into small balls (about 1 inch in diameter). You should be able to make about 20 balls.

4. Place the energy balls in an airtight container and store them in the refrigerator for up to a week, or in the freezer for up to a month.
