Matcha Coconut Loaf

🌿 You’ll Need:
For the Cake:
- 2 eggs
- 100 g vegetable oil
- 125 g coconut milk
- 120 g sugar
- 160 g all-purpose flour
- 60 g shredded coconut
- 6 g premium matcha powder @matchaunion
- 6 g baking powder
- ¼ tsp salt
For the Topping:
- 100 ml coconut milk
- 100 ml sweetened condensed milk

1️⃣ Prep the oven
Preheat to 180°C (350°F). Lightly grease or line a loaf pan.
2️⃣ Mix wet ingredients
In a bowl, whisk together eggs, oil, and coconut milk. Add sugar and whisk until smooth.
3️⃣ Mix dry ingredients
In a separate bowl, stir together flour, shredded coconut, matcha, baking powder, and salt.
4️⃣ Combine
Pour wet into dry and stir until just combined and smooth.
5️⃣ Bake
Pour the batter into the pan and bake for ~50 minutes, until golden-green and a toothpick comes out clean.
6️⃣ Soak & finish
While still warm, poke small holes into the loaf. Mix coconut milk and condensed milk, then pour over the cake to soak in.
7️⃣ Optional topping
Sprinkle with extra shredded coconut or toasted coconut chips for texture.
