
Matcha Cherry Balls 🍒
Looking for a snack that’s sweet, fruity, refreshing and a little extra? These Matcha Cherry Balls are the answer. Bursting with juicy cherries, coated in creamy matcha white chocolate, and made with just a few simple ingredients, they’re the perfect bite-sized treat for summer snacking.
Keep them stashed in the freezer and pop one out whenever your sweet tooth strikes.
Ingredients (makes ~10 balls)
- 50g frozen cherries
- 50g shredded coconut
- 1 tbsp almond flour
- 2–3 Medjool dates, pitted
- 100g white chocolate
- ½ tsp premium matcha powder @matchaunion
- 1 tsp coconut oil
Instructions
1. Blend the Cherry Base
In a food processor, blend the frozen cherries, shredded coconut, almond flour, and dates until you get a sticky, moldable dough.
2. Shape & Freeze
Form the mixture into 10 small balls.
Place on a parchment-lined tray and freeze for at least 30 minutes, or until firm.
3. Make the Matcha Chocolate Coating
Melt the white chocolate with coconut oil over low heat (or in short microwave bursts).
Once melted and smooth, stir in the matcha powder until evenly green and creamy.
4. Dip & Set
Remove the frozen balls from the freezer.
Dip each one into the matcha chocolate to coat.
Place back on parchment and let the coating set in the fridge or freezer.
Serving & Storage
- Store in an airtight container in the freezer.
- Let sit at room temperature for ~10 minutes before serving for the perfect texture.
