Homemade Earl Grey Syrup

This simple syrup adds a floral, citrusy depth that pairs beautifully with matcha.

Ingredients

  • 1 cup boiling water

  • 3 tbsp Earl Grey black tea leaves (or 3 tea bags)

  • 1 cup sugar

Method

1️⃣ Steep the Earl Grey tea in boiling water for 10 minutes.
2️⃣ Strain the tea to remove the leaves or bags.
3️⃣ While the tea is still warm, stir in the sugar until completely dissolved.
4️⃣ Let cool, then transfer to a glass jar or bottle. Store in the refrigerator for up to 2 weeks.

  • ¾ cup milk of choice (oat, almond, or dairy)

  • 1–2 tsp Earl Grey syrup (adjust to taste)

  • 1 tsp ceremonial matcha powder @matchaunion

  • ¼ cup hot water (about 80°C/175°F)

  • Ice (if making iced)


Instructions

Step 1: Sweeten the Milk

Heat or froth your milk (depending on whether you're making it hot or iced), then stir in the Earl Grey syrup.

Step 2: Whisk the Matcha

Sift matcha powder into a bowl. Add hot water and whisk until smooth and frothy using a bamboo whisk or milk frother.

Step 3: Assemble the Latte

  • For hot: Pour the sweetened milk into a mug, then gently add the whisked matcha on top.

  • For iced: Add ice to a glass, pour in the milk + syrup, then top with the whisked matcha for a beautiful layered look.
