Ingredients (makes ~6 rolls)

  • 3 medium-large red pointed peppers

  • 1 tbsp olive oil (plus more for serving)

  • 2 heaping tbsp cream cheese

  • 1 tsp premium matcha powder @matchaunion

  • 40g fresh mint, finely chopped

  • A handful of walnuts, roughly chopped

Optional:

  • Lemon zest

  • Flaky salt, to finish


Instructions

Step 1: Roast the Peppers

Preheat oven to 200°C (390°F).
Halve and deseed the peppers, then brush with olive oil.
Roast on a lined tray for 20 minutes, until soft and slightly blistered.
Let them cool, then gently peel off the skins for a silky texture.

Step 2: Make the Filling

In a bowl, combine:

  • 2 heaping tbsp cream cheese

  • 1 tsp matcha powder

  • 40g finely chopped fresh mint
    Mix until smooth and evenly green.

Step 3: Roll the Peppers

Place about 1 tsp of filling onto the wider end of each pepper half.
Roll gently from bottom to top, seam side down.

Step 4: Garnish & Serve

Arrange rolls on a plate. Drizzle with olive oil, sprinkle over the chopped walnuts, and if you’d like, add a touch of lemon zest and flaky salt for extra brightness.
