Ingredients (makes ~20 snowballs)

1 organic lime (1 tsp zest, 1 tbsp juice)

Instructions
Step 1: Prep the Apricots
In a blender or food processor, purée the dried apricots until smooth. If needed, add a small splash of warm water to help blend. Set aside.
Step 2: Make the Wet Base
In a large mixing bowl, whisk together oil and eggs until light and fluffy.
Add the sugar, lime zest, lime juice, and vanilla extract. Mix until well combined.
Step 3: Combine the Dry Ingredients
In a separate bowl, whisk together the flour, cornmeal, baking powder, premium matcha powder, and salt.
Step 4: Mix and Chill
Gradually add the dry mixture to the wet mixture, then fold in the apricot purée until a soft dough forms.
Cover the bowl and chill in the refrigerator for 3 hours to firm up.
Step 5: Shape and Coat
Preheat oven to 180°C (350°F).
With slightly damp hands, roll the chilled dough into small balls (~1 inch in diameter).
Roll each ball generously in powdered sugar, making sure they’re fully coated.
Step 6: Bake
Place the snowballs on a lined baking sheet, leaving a bit of space between each.
Bake for 12–13 minutes, until the edges are set but the centers are still soft.
Let cool slightly before serving—they’ll be soft, chewy, and absolutely irresistible.
