Crunchy. Creamy. Earthy-sweet. These Healthy Crunch Bites are your new go-to snack fix—ready in just 10 minutes and packed with nourishing, feel-good ingredients. With a fudgy cacao-peanut base and a luscious matcha white chocolate topping, they’re proof that healthy treats don’t have to be boring.
Ingredients (makes ~12 small bars)
For the base:

60g cacao powder

60g maple syrup

2 tbsp peanut butter

4–5 rice cakes, crushed into small pieces
For the topping:

80g white chocolate

1 tsp coconut oil (optional, for a smoother texture)

Extra peanut butter, for swirling on top (optional)
Instructions
Step 1: Make the Crunchy Base
In a bowl, mix together the cacao powder, maple syrup, and peanut butter until smooth.
Fold in the crushed rice cakes until everything is evenly coated and sticky.
Step 2: Press & Shape
Line a small container or dish with parchment paper.
Press the mixture firmly and evenly into the dish to form a compact base layer.
Step 3: Make the Matcha Chocolate Topping
Gently melt the white chocolate (using a double boiler or microwave in short bursts).
Stir in the matcha powder and coconut oil (if using) until smooth and evenly green.
Step 4: Assemble
Pour the matcha chocolate over the base and spread it evenly with a spatula.
Add small dollops of peanut butter on top and swirl them gently for a marbled finish (optional but delicious!).
Step 5: Freeze & Slice
Place the dish in the freezer for about 30 minutes, or until fully set.
Once firm, lift out the parchment and slice into bite-sized bars.
Storage
Keep your bars stored in an airtight container in the fridge for up to a week, or freeze for long-term snacking.
