🌿 You’ll Need:

  • 3 egg whites
  • 130 g sugar
  • 2 tsp vanilla extract
  • 270 g unsalted butter (softened)
  • 2 tsp premium matcha powder @matchaunion

✨ Method:

1️⃣ Heat the base
In a heatproof bowl over gently simmering water, whisk egg whites, sugar, and vanilla until warm, glossy, and pale.

2️⃣ Whip until airy
Transfer to a stand mixer and beat until the mixture cools slightly and becomes fluffy.

3️⃣ Add butter & matcha
Add softened butter and matcha powder. Beat on medium speed for about 10 minutes until smooth and creamy.

4️⃣ Refine the texture
Lower the speed and beat for another 5 minutes until silky and perfectly spreadable.

5️⃣ Use immediately
Pipe or spread onto cakes, cupcakes, or anything that deserves a matcha upgrade.


☁️ Optional Tips:

  • Sift matcha beforehand for a smoother finish
  • Add a pinch of salt to enhance flavor
  • Chill slightly if it gets too soft while piping
