Our Matcha Croissants recipe brings a delightful twist to the classic French pastry, making it not only vegan-friendly but also irresistibly delicious. Infused with the subtle charm of matcha, these croissants are perfect for a fancy brunch or as a treat to brighten up your day.

Makes: 12 croissants | Preparation Time: 1.5h + overnight rest

Ingredients:

  • 2 1/4 teaspoons (1 packet) active dry yeast
  • 1 cup warm non-dairy milk (such as almond, soy, or oat milk)
  • 1/4 cup coconut sugar
  • 2 scoops matcha powder
  • 4 cups all-purpose flour
  • 1 teaspoon salt
  • 1 cup vegan butter, cold
  • 1/4 cup maple syrup (for glazing)

Instructions:

  1. Yeast Mixture: Mix the warm non-dairy milk with coconut sugar and yeast. Let it sit for about 5 minutes, or until it becomes frothy.

  2. Dough Preparation: In a large bowl, mix together the flour, matcha and salt. Add cubed cold vegan butter and blend it with the flour. Then, pour in the yeast mixture, and stir everything to form a dough. Knead the dough for about 5 minutes on a floured surface.

  3. Chill the Dough: Roll the dough into a rectangle, fold it into thirds like a letter, and refrigerate it for at least 1 hour, or overnight for best results.

  4. Baking Prep: Preheat your oven to 400°F (200°C).

  5. Shaping Croissants: Roll out the chilled dough into a rectangle again. Cut it into triangles and then roll each triangle from the base to the tip to form a crescent shape.

  6. Bake: Place the croissants on a parchment-lined baking sheet and bake for 15-20 minutes, or until they're golden brown.

  7. Glazing: Brush the warm croissants with maple syrup to give them a nice shiny glaze.

  8. Enjoy: Serve these warm, vegan matcha croissants with your favorite beverage or as part of a leisurely brunch.
