Matcha Mousse Cake

The combination of creamy matcha and the decadent crunch of chocolate cookies creates a dessert experience that’s both luxurious and comforting. Plus, it’s a fantastic way to impress friends and family at your next gathering or simply to indulge yourself in a moment of sweet bliss. 💚

INGREDIENTS:

1. Biscuit base:

  • 100g chocolate cookies (We recommend using Oreos and remove a bit of the cream filling)
  • 60g butter

2. Matcha filling:

  • 3 sheets of white gelatine (We used 6g vegan gelling agent)
  • water for soaking
  • 400g cream
  • 15g Matcha Union Premium Matcha 
  • 100g milk
  • 80g sugar

INSTRUCTIONS:

1. Crush the cookies and mix the crumbs with (better melted) butter until well combined.

2. Press the mixture evenly into the bottom of the springform pan using the back of a spoon.

3. Refrigerate to set.

4. Soak the gelatin in cold water according to the package instructions.

5. Whip the cream with the matcha powder until stiff peaks form, set aside and refrigerate.

6. Squeeze the soaked gelatin to remove excess water, heat the milk and sugar in a small saucepan over low heat, stir in the gelatin and dissolve completely.

7. Remove from heat and let it cool to room temperature (about 15 minutes).

8. Gently fold the matcha whipped cream into the cooled gelatin mixture, pour the mixture over the prepared cookie base, refrigerate for at least 4 hours, or overnight, until set.

9. Last but not least, dust the matcha mousse cake with matcha powder or cocoa powder!
