Matcha Mango Sticky Rice
Soft mango, creamy coconut, and a touch of earthy matcha — this bowl of sticky rice is cozy, simple, and deeply satisfying. A dessert that feels like a gentle getaway to somewhere warm and peaceful.
🍃 You’ll Need:
- 1 ripe mango
- 120 g glutinous (sticky) rice
- 100 ml water
- 200 g coconut milk
- 3 tbsp sugar
- ½ tsp salt
- 1 tsp cornstarch
- 1 tsp premium matcha powder @matchaunion
🍚 Method:
1️⃣ Prep the rice
Rinse the sticky rice about 6 times until the water runs clear. Add to a pot, press down evenly, pour in 100 ml water, and cover with a piece of baking paper. Place the lid on top.
2️⃣ Steam
Cook on high heat for 2½ minutes, then reduce to the lowest heat and steam for 15 minutes.
3️⃣ Make the coconut sauce
In a separate pot, gently heat the coconut milk, sugar, and salt until the sugar is fully dissolved.
4️⃣ Combine
Transfer the cooked rice to a bowl and pour about ⅔ of the coconut sauce over it. Mix gently and let sit for 20–30 minutes so it can soak up all the creamy goodness.
5️⃣ Make the matcha drizzle
In a small bowl, mix the cornstarch, matcha, and 1 tbsp water until smooth. Add to the remaining coconut sauce and heat over medium until it thickens slightly.
6️⃣ Serve
Plate the sticky rice with sliced mango. Drizzle generously with the matcha coconut sauce.
