This Strawberry Matcha Marble Cake is fluffy, fruity, and full of color — with earthy matcha, sweet strawberry ribbons, and the dreamiest pink glaze on top. 🍓🍵

🌿 You’ll Need

For the cake:

  • 100 g sugar
  • 2 eggs, room temperature
  • 80 g neutral oil
  • 40 g melted butter
  • 150 g Greek yogurt
  • 180 g flour
  • 1½ tsp baking powder
  • ½ tsp salt
  • 10 g premium matcha powder @matchaunion
  • 8 g freeze-dried strawberries, ground
  • 30 ml milk

For the strawberry glaze:

  • 80 g powdered sugar
  • 5 tbsp heavy cream
  • 1 tsp lemon juice
  • 5 g freeze-dried strawberries, ground
  • Optional: a few drops of red food coloring for a brighter pink glaze

To decorate:

  • Freeze-dried or fresh strawberry slices

✨ Method

1️⃣ Whip the eggs
Whisk the eggs and sugar for about 5 minutes, until pale, light, and fluffy.

2️⃣ Add the wet ingredients
Pour in the neutral oil, melted butter, and Greek yogurt. Mix until smooth and creamy.

3️⃣ Fold in the dry ingredients
In a separate bowl, whisk together the flour, baking powder, and salt. Gently fold into the batter until just combined.

4️⃣ Make the strawberry batter
Divide about one-third of the batter into a separate bowl and mix in the ground freeze-dried strawberries.

5️⃣ Make the matcha batter
Stir the matcha powder into the remaining batter until smooth and evenly green.

6️⃣ Create the marble swirl
Grease and lightly flour a loaf pan. Alternate spoonfuls of the matcha and strawberry batters into the pan, add the milk, then gently swirl with a skewer or knife to create a marble pattern.

7️⃣ Bake until fluffy
Bake at 175°C / 350°F for about 50 minutes, or until a toothpick inserted into the center comes out clean.

8️⃣ Cool completely
Let the cake cool in the pan for 20 minutes, then transfer it to a wire rack and allow it to cool completely.

9️⃣ Glaze & decorate
Whisk together the powdered sugar, heavy cream, lemon juice, and ground freeze-dried strawberries until smooth. Pour the glaze over the cooled cake and finish with strawberry slices.

  • Whip the eggs and sugar well for a lighter, fluffier cake
  • Sift the matcha before adding it for a smoother batter
  • Don’t over-swirl, or the marble pattern may disappear
  • Let the cake cool fully before glazing so the pink glaze sets beautifully
  • Add food coloring only if you want a brighter strawberry-pink finish
