Matcha Gingerbread
As the festive season approaches, the aroma of gingerbread starts to fill the air. But this year, we're adding a matcha twist to this classic treat! Our Matcha Gingerbread recipe is not only delicious but also refined sugar-free, making it a guilt-free indulgence for your holiday celebrations.

INGREDIENTS
- 50g dates
- 70ml water
- 220g almonds, ground
- 50g walnuts, chopped
- A pinch of salt
- 1 tbsp almond butter
- 1 tsp gingerbread spice
- 1 tsp orange zest
- 30ml freshly squeezed orange juice
- 100g Matcha chocolate
- Walnut halves for decoration

Date Paste: Blend the dates with 70ml of water in a mixer to create a smooth date paste. If your blender isn't high-performance, soak the dates in some water for 20 minutes beforehand to soften them.

Preparation: While the dates are soaking, chop the walnuts and squeeze the orange juice.

Dough Formation: In a mixing bowl, combine all the ingredients. Use a spoon to mix everything into a sticky dough. Take about 1 tablespoon of the mixture, roll it into balls, and then flatten them to form your gingerbreads.

Freezing: Place the gingerbread shapes on a plate lined with parchment paper and freeze for about 20 minutes.

Chocolate Coating: While the gingerbreads are in the freezer, gently melt the Matcha chocolate.

Decoration: Once the gingerbreads are firm, coat them with the melted Matcha chocolate and garnish with walnut halves or almonds.

Final Touch: Refrigerate the gingerbreads briefly once more before serving.
