Matcha Custard & White Chocolate Rolls

Soft, fluffy rolls filled with silky matcha custard and melty white chocolate — the kind of bake that turns your kitchen into a cozy café. Warm, comforting, and just a little indulgent.


🌿 You’ll Need:

For the Matcha Custard:

  • 200 ml milk
  • 1 tsp vanilla extract
  • 2 egg yolks
  • 6 g premium matcha powder @matchaunion
  • 45 g sugar
  • 20 g cornflour
  • 20 g butter

For the Dough:

  • 250 ml warm milk
  • 50 ml heavy cream
  • 75 g sugar
  • 7 g instant yeast
  • A pinch of salt
  • 170 g bread flour
  • 380 g all-purpose (or light whole wheat) flour
  • 70 g soft butter

Extra:

  • 150 g white chocolate chips
  • 1 egg yolk + 1 tbsp milk (for brushing)
  • Optional glaze:
  • Caramel syrup or simple sugar syrup

✨ Method:

Make the Matcha Custard:

1️⃣ Warm the milk
Heat milk with vanilla gently (don’t boil).

2️⃣ Whisk the base
In a bowl, whisk egg yolks, matcha, sugar, and cornflour until smooth.

3️⃣ Combine & cook
Slowly add warm milk, then return everything to the saucepan. Cook over medium heat, stirring constantly, until thick and creamy (4–5 minutes).

4️⃣ Finish & chill
Remove from heat, stir in butter, then transfer to a bowl. Cover directly with plastic wrap and chill for at least 2 hours or overnight.


Prepare the Dough:

5️⃣ Mix the dough
In a large bowl, combine warm milk, cream, sugar, yeast, and salt. Add both flours and knead until a dough forms.

6️⃣ Add butter & knead
Knead in soft butter until smooth and elastic.

7️⃣ First rise
Place in a greased bowl, cover, and let rise for 2 hours (or overnight in the fridge).


Shape & Bake:

8️⃣ Roll & fill
Roll dough into a 55 × 40 cm rectangle. Spread chilled matcha custard evenly and sprinkle with white chocolate chips.

9️⃣ Fold & shape
Fold top and bottom toward the center to create layers. Cut into strips, twist, and shape into 6 rolls.

🔟 Second proof
Place on a tray, cover, and let rise for 45 minutes.

1️⃣1️⃣ Bake
Brush with egg wash and bake at 190°C (375°F) for ~15 minutes until golden.

1️⃣2️⃣ Glaze & enjoy
While warm, brush with caramel or simple syrup for extra shine and softness.


☁️ Optional Touches:

  • Dust with powdered sugar or matcha
  • Add crushed pistachios for crunch
  • Serve warm with a matcha latte
